which provided effective reference and technical support for the determination of synthetic pigments in candy products. Method: The candy pigment was detected by high performance liquid chromatography (HPLC), in which the separation chromatographic column was rd-c18, the mobile phase was methanol-0.02 mol/l ammonium acetate, and the detection wavelength was 420 nm. For the sampling data, the chi square of the detection rate of candy synthetic pigment is calculated according to the price range, market places and the detection rate of synthetic pigment in previous years(χ2) Inspection.Results: In the HPLC detection of this study, the target candy synthetic pigments have a good linear range, and the correlation coefficient (R2) is greater than 0.999. through χ 2 test, the results show that the detection rate of candy synthetic pigment is different in the price range( χ 2=18, p<0.01). There are differences in market places( χ 2=9.277, p<0.01). There was significant difference between artificial pigments in previous years( χ 2=55.58, p<0.001). Conclusion: HPLC method can be used to detect synthetic pigments in candy. Detection rate and price range of synthetic pigments, different places of candy sold in the market, used for candy products in previous years χ 2. The test can prove the difference.
